This was my favourite
chocolate cake when I lived in Sweden. It should be gooey, so don’t cook it too
long, and ideally it ought to be served with cream and perhaps some
strawberries or raspberries. You can also top it with frosting, as desired.
Ingredients:
1 vanilla pod (or
2 tsp vanilla extract)
2 eggs
1 cup sugar
½ cup flour
4 tbsp cocoa powder
1 tsp salt
½ cup vegetable oil
(or melted butter)
Instructions:
1. Split the vanilla
pod and scrape out the seeds. Whip the eggs, vanilla seeds (or extract), and
sugar together until light and fluffy.
2. Sift the flour and
cocoa powder together and mix with the salt and oil.
3. Blend everything
together and pour into a lined cake tin.
4. Bake for 15-20
minutes at 165 C.
